Here’s one of our household’s favs for now…

TORTILLA PIZZA…..FAST & HEALTHY PIZZA IN UNDER 15 MINS-

To Make 4 Pizzas

Topping - either buy a readymade sauce, use tomato puree or make a simple sauce with sauteed onion & garlic, a tin of tomatoes, cooked down for 10 mins with some dried pizza herbs & seasoning.

4 wholemeal tortillas

2 balls of Mozzarella, drained and torn apart or some sliced firm goat’s cheese

Toppings of your choice

eg chopped salami, chorizo, prawns, cold meats

Chopped mushrooms, peppers ..you chose

Some dried pizza herbs

Extra grated cheese to top

Simply spread the tortillas with the chosen sauce, add your toppings and cheese, add a raw egg to the middle if liked and cook the tortilla pizzas on foil directly on the shelves of a hot oven ( around 200C) for 10 mins.

Serve with a big pile of fresh rocket and some homemade coleslaw made with a light yogurt and lemon dressing.
